Balancing It All

Coming home after a long day to these two cute little faces is one of my favorite things. Their whole bodies shake they’re so excited and they cover me in slobbery puppy kisses and cuddle up next to me on the couch. It is the perfect way to relax after a long day!

In the past four days I have worked 44 hours. I know a lot of people work a lot more but I am not used to it. My internship is a lot of fun and I’m learning a ton but it is tiring and exhausting. I have to give these Calvin Klein shoes a major shout out. I was on my feet in them all day yesterday and they did not cause me any pain or give me any blisters. That is a major thing for me. Almost all shoes seem to hurt my feet in some way. I love how they have extra padding throughout the entire shoe, I think that really makes a difference.

My boss took Kayla (the other intern) and I out to Bullfrog Brewery yesterday for lunch. It was a lot of fun getting to know him and ask him questions and have some good food all at the same time. I thought that was really nice of him! I didn’t take any pictures of lunch because I didn’t want to be weird but I got a veggie panini and sweet potato fries. It was soo good!

I totally get why people who work a lot can eat like crap. When your job is go go go the entire day you can go six hours without food and then are absolutely starving. The thought of things like Doritos or fast food seems very appealing when your stomach is growling and you are too tired to want to do anything besides sit down and fall fast asleep. I totally get how falling into those bad eating habits can happen, but I’m not going to let it happen to me. Though I have been eating Doritos in the office because someone keeps sharing a huge bag I make a giant green protein smoothie for breakfast, come home for oatmeal at lunch, and then make a breakfast burrito for dinner. I still have to learn how to plan out healthy snacks and find good, quick, filling foods for eating on the go. I also have to figure out how to plan exercise into my day. I wake up at six, am out the door by 7:20, and then get home around 6:45-7:00. I know I need to work out but its so hard to plan when.

I also have to learn how to balance blogging while juggling my job. To go from working ~4 hours a week to 55 this week is a big adjustment. I want to blog so badly but when I get home am completely exhausted and am in bed by ten. Also since I’m running around nonstop since 7:30 am there’s no real material for me to photograph to blog about. Next week I head back to the city for another busy week of training but after that it should start slowing down again. Its so weird because the days fly by so fast at work, which I really like. I have never worked a job before where I’m not looking at the clock at some point, bored and waiting to go home. I feel like the days are blurring together! Thanks for sticking with me as I figure all this out, I promise that while I may be a little sporadic at the moment I’m not going anywhere! To think that this is only the first week of the internship, I can’t imagine where it will go from here! I’ll make sure to keep you guys in the loop on all of it. :)

Question of the Day: How do you manage your job and personal life and blog? I get to see Josh tomorrow for the first time in two weeks and I can’t wait! Also, what are some of your favorite quick and easy, healthy snacks? I really need to stop eating those damn Doritos!

Internship Training {And Good News!!}

Wow a lot has happened in two days! I’m back in Williamsport after hitting the road at 7am on Monday to head to the city for two days of training for my summer internship. This is my second summer internship (my first being for Sony in Hawaii) and I am so excited for the opportunity. Anything that gets me experience and that I get to add to my resume is a good thing. Pay and college credit aren’t bad either! ;p I’m going to keep this recap short because I’m tired and start my first day of training at my office tomorrow morning. I still have to pick out my outfit and go over some notes so I can make a good impression. Wish me luck please! :D

I made a huge smoothie Monday morning because it was quick to make, easy to take out the door and also really healthy. I’m so glad I made it because it ended up being one of the only healthy things I ate the entire trip. I’ve learned my lesson and will pack snack foods for business trips from now on!

During the two-hour car ride I demolished that smoothie. I’ve become so addicted to them since Diane brought a VitaMix into our lives!

Training was a lot of fun. Our trainer is really smart, really experienced, and also really high up in the company. He was down to Earth and really knew what he was talking about and very helpful with giving us advice and tips for how to succeed. I hope I can put them to good use tomorrow! Lunch was catered and while absolutely delicious it consisted of a meat option, two sides, and a dessert. Both days one of the sides was potatoes, while one day the other was cole slaw and the next day it was applesauce. I had two days of potatoes + sugar for lunch. Add to that the huge bowls of candy on the table for the ten hours we were there each day and I definitely did not practice the healthiest eating habits. Thankfully now I’m home and can get back to eating better things. There was a late night Bob Evans cheesy potato soup run yesterday that I’m not proud of. ;p

All the intern trainees were put up at the Wyndham for the night. Everyone in the intern class was so incredibly nice. We all hung out talking late into the night just getting to know each other and having fun. It was a great time.

And now for pictures of the hotel because I LOVE seeing other people’s hotel pics so I thought I’d share. It was really clean and the staff was super nice.

They had a cafe in the hotel where we had stipends for dinner and breakfast. I loved that they served Starbucks in the morning, it kept me awake all day!

TV where my roomie and I watched the first episode of The Bachelorette. Does anyone else think the guy who arrived in the helicopter seems a little sleazy? I’m rooting for the race car guy!

We were pretty close to Hershey so the whole hotel was decked out in Hershey memorabilia. Their dark chocolate is my favorite, hands down.

I love the Be Well pillows! What a great message, and so cute.

After changing out of business clothes and getting settled in we all met back downstairs and enjoyed happy hour. I got a vodka and cranberry that was especially nice after a long day of training.

Breakfast was an egg and cheese onion bagel. I grabbed it along with a venti coffee, an apple and an orange to snack on throughout the day. Training was awesome, I feel like I learned a ton and met some really cool people. I hope I love working for this company as much as I think I will and that I can have a good future with them.

And as I was walking back to my car after training was done for the day I got a phone call from my dermatologist with the best news ever!! Apparently I was born with the freaky looking moles I had removed and they had no precancerous cells in them of any kind, they were completely benign. To say I was relieved is an understatement. Even though my dermatologist told me not to worry, lets be honest, I worried. Its what I do. But it is such a good feeling to know that in this moment I am in perfect health. It is now up to me to make good choices to keep it that way. And with that I’m going to not focus on all the things I ate in the past two days and instead focus on the future! :D

The Operation

Yesterday’s surgery was a success!

I got my mole removed and all stitched up. It was my second surgery ever, I had my wisdom teeth removed last winter, and I was surprised that it was relatively painless. The dermatologist numbed my arm and then I didn’t feel a thing as he cut me up and stitched me back together. I’ll find out the biopsy results in five days and then come back in two weeks to get my stitches removed. He already predicted the results will come back completely fine so that makes me happy. :D

After getting back from the doctor and picking up my car (more on that later) I headed to State College. Josh and I were invited to an end of the semester night of games and dancing.

We made sure to have a filling dinner before going out. I picked up two Chipotle bowls for us and got hit on with the worst pick up line ever. “So tell me how do you like your Chipotle bowl? Yours is an opinion I’d want to take.” I had to laugh.

I was super excited to get to see this guy. He left on the Megabus to spend Mother’s Day with his parents today so I was excited we’d have a little more time together before I start my internship and crazy schedule.

Lily (left) and Nicole (right) were hosting game night. That’s Nicole’s boyfriend Mike in the picture. We played rounds of Catchphrase and it was so much fun!

Ian, Dinora, and Josh. Everyone’s all smiles but we got really into this game. It was boys versus girls for the later half of the games and it got intense. There was some smack talking on the boys side but the girls prevailed, winning twice!

Josh, me, and Peter. It was such a fun night. We played until 11 and then everyone headed out to go dancing. Josh and I had to skip out on that though because of me falling and hitting my knee against my metal bed frame early in the afternoon while I was packing. It hurt so bad and I have an ugly bruise but there won’t be any long term damage, I just needed to rest it. We also had to wake up super early because Josh had an early Megabus to catch. We’re definitely taking a rain check though because I want to go dancing so badly!

This morning Lily and I met at Waffle Shop for breakfast. It was so great to have some girl time and hear how the dancing went last night. I wish we could hang out more often!

I had my usual pecan pancakes and eggs. It was delicious as always.

After that I headed home since I work tonight and wanted to get ready. Unfortunately while I was driving home my car started bucking for a few seconds when I was at 65 mph. It happened three times while I was on the road. I have an old car and just got the transmission fluid changed for the first time in probably forever. I’ve owned it for three years now and heard that getting a transmission fluid change can help extend the life of your car. Being proactive I thought spending $150 when the car wasn’t giving me any transmission problems would save me in the long run, and the mechanic assured me it would be fine. Unfortunately it looks like it might have caused something to break, as the mechanic told me today that changing an old cars transmission is flipping a coin. I’m driving it to work this evening and tomorrow morning to test it and if it still gives me trouble I’m going to have to take my dad’s car to my internship training on Monday. Please cross your fingers for me, I do not want to be in the market for a new car!

Presents from the Post Man

I love getting mail! I’m sure this will change when I live on my own and most of that mail turns into bills and payments but for now I soak up the excitement of looking forward to packages and letters. :D The post man was very good to me today!

Time has been flying by lately. I cannot believe it is already the second week of the month, meaning its Chobani shipment time! I’m a part of their Chobani of the Month club where every month I receive a case of one of their flavors. It is definitely a monthly highlight as I eat a Chobani virtually every single day. Before taking it out of the box Diane guessed this month’s flavor would be blueberry while I guessed blood orange.

I was right this month! Ever since I tried a blood orange this past winter I’ve been wishing and hoping every single month that it would be the featured flavor. And then every single time it hasn’t been I’ve fallen in love with the featured flavor and ended up not missing the blood orange. Well this month I finally get to enjoy the blood orange! I already had one today in my oatmeal and it was so good! <3 I love me some Chobani.

I also got my free It’s A 10 Miracle Leave-in Product in the mail today. My hair has been in serious need of some TLC lately and this stuff works wonders. (I’m cheaping out and waiting to get my hair professionally colored and cut until I get my first real paycheck this summer.) I ran out of my last bottle so I’ve been wanting to stock up on it for a while and I figure what time is better than free right? Pampered Chef is running a promotion in partnership with Bloom where just for liking them on Facebook you get a $20 code to use at Bloom. You just have to pay shipping! All you do is like them on FB here and then create an account with Bloom here and voila, its shopping time! For the $18 bottle I only paid $5 and it was to ship it to me. You really cant beat it.

Speaking of things you can’t beat, birthday cake!! Birthday and wedding cake are two of my favorite treats. My dad just turned 59 so we celebrated with a strawberry ice cream cake from Brusters. They make the best ice cream cake I’ve ever had, and this is coming from a huge Carvel cake girl. The flavors are all so rich and fresh. I’ve been eating really healthy and got in a 50 minute pilates workout today so I didn’t feel guilty in the least for eating this. Its all about moderation in life, right? The thing I was not expecting was that I wouldn’t be able to finish the cake! I have a huge sweet tooth but I haven’t been indulging in too many sweets recently since I’m trying to be good and lose some weight. This cake was super sweet and way more dessert than I’ve been used to eating. I ate about half of what’s in the picture and then called it a day. That has got to be the first time I’ve ever not finished a piece of cake that’s in front of me. It was a good feeling! :D

Today was full of indulgences because I also got to indulge my Vitamix obsession! I made a mango, banana, and strawberry spinach smoothie with hemp protein and chia seeds. It was so good and so big and thick I ate it out of a bowl. I love knowing how literally everything in it is so good and healthy for you but it tastes like a regular fruit smoothie. There are a lot of these in my future.

And now its my bed time! I’ve got to drop my car off tomorrow morning to get the AC fixed and get the transmission fluid replaced. Here’s hoping it goes well! While my car is in the shop I have an appointment with my dermatologist to get the mole removed off my arm. I’m hoping it won’t be painful because after that I’m heading back to State College to celebrate the end of the semester with a night out dancing with Josh and friends! It should be a great time!

Extreme Makeover: Blog Edition

Notice anything different about my blog? This weekend it got a BIG makeover! All credit goes to Brittany, an awesome Canadian gal who redesigned my layout, made me a new header, and got it all optimized for computer, mobile and tablet readers. If you saw what this blog looked like before the makeover you know she is SERIOUSLY talented. She’s starting a web design company called Louis & Lola and is looking to beautify more blogs. She can be reached at info@louisandlola.net. I could not recommend someone more highly than I do her. I never imagined my blog would turn out this good, it is everything I have always wanted it to be and I absolutely love it! I just wanted to do send a little shout out of thanks to Brittany! <3

As for changes on the blog I still have my About, Contact, Fashion, and Food pages. The big change with them is that I’m actually using and updating my Fashion and Food pages now. Every time I make a recipe and share it in a post here I will take a picture of it and link it on the Food page back to the original post. This should make for quick browsing if you’re just looking for a recipe or are trying to find something you read about on here a while ago. And anytime I’m out and about and dressed somewhat cute I’ll take a picture and update it on the Fashion page with details of where I got everything I’m wearing. I’ll also make a little note on a main post that the Fashion page was updated. I also now have my Tweets synched with my website, archives of my posts, and a share button to help spread the word about my blog. I’d love you forever if you posted it somewhere. <3

Between blog updates and spending the weekend in State College with Josh this weekend was a busy and fun one! To celebrate the semester being over (I got all A’s!) Josh and I met up with a group of people in his program for dinner at Duffy’s Tavern in Boalsburg, PA. Boalsburg is only ten minutes away from State College and is the cutest little town. Josh and I headed over early so we could visit our favorite furniture store.

We discovered Riley on Main on a whim this past summer when Josh’s parents were in town and we ate at Duffy’s. I can still remember walking in and feeling like I had walked into the place that was meant to furnish my dream home. The ladies who run this place have such great style and always have little snacks out to munch on while you shop. Starting this Friday they’re going to do happy hour on the deck outside! Josh and I definitely have plans to go back for that sometime this summer.

They were closing a few minutes after we got there so we had to browse quickly but I found my dream desk. Too bad its $1400. Maybe one day when I have my MBA and big girl job I’ll be able to afford it. ;p

We were starving by dinnertime and were so excited for Duffy’s. We were a little nervous about getting in because it was Penn State graduation weekend and we didn’t have reservations. We also had a party of eleven. Thankfully Josh was a miracle worker and they managed to pull tables together (despite being sold out!) and have us seated together in our own little room.

I got a veggie cheeseburger with potato salad. It was really good. A way I found to reduce some extra calories with out to eat meals is to only eat one half of the bun. Even better than the food was the company. We had a lot of fun hanging out and chatting over dinner.

About seven of us were still hungry after dinner so we decided to head back to State College and celebrate the gorgeous weather with some froyo from Kiwi! I got cake batter and strawberry yogurt and then topped them with blueberries, mochi, strawberries, Gertrude Hawk caramel chocolate cups and cookie dough. It was heaven in a bowl.

I was so excited to be spending the weekend with Josh. He was away last weekend in San Diego and I really missed him. He was so sweet and surprised me with a cow and seal and a crow mug from a coffee shop he frequented a lot while he was there and absolutely loved. Looking at all the pictures he took I was amazed at how beautiful San Diego is. I really want to visit there someday!

Josh and I are making a big effort to try and eat healthy and get in shape this summer. I took lots of pictures of our food this weekend to share some ideas for healthy snack and meal ideas. I’m a big fan of Chipotle burrito bowls. You reduce the carbs by nixing the wrap and all their ingredients are natural and fresh, not to mention super tasty! You also can’t beat the $6 price tag, and that includes guacamole if you order the vegetarian bowl!

Josh is so talented with mixing and pairing food and flavor combinations. This spinach salad was only three hundred and fifty calories and was covered in tomatoes, peppers, carrots, chickpeas, reduced fat feta, walnut shavings, and Josh’s homemade salad dressing.

He made it by mixing Castella bruschetta with Asian rice vinegar. It tastes so good and has such a bold flavor and only added 35 calories to our meal!

Josh made an extra batch of the dressing and marinated some tempeh in it for a few hours. He then grilled it up and we broiled spinach, cheese, pepper, and tomato tempeh sandwiches. They were soo good. I could totally see myself packing this for lunch when I start working at my internship next week!

Of course no weekend in State College is complete without at least one visit to Wegmans! Josh and I stopped by for dinner one night and I picked up some of their tomato orzo soup. Its so good and so hearty. And only 200 calories a serving!

For dessert one night Josh and I had a serving of Turkey Hill’s Banana Split frozen yogurt. We added some sliced mango and topped it with cool whip. It was so delicious! This is definitely one of my favorite new flavors.

I don’t know how I avoided oatmeal until I was almost twenty years old. Now I absolutely love it and usually eat it once a day. I made some Quaker Oats with blueberry Chobani and a cut up banana. It was so good.

Josh and I clipped a $1 off coupon for Quaker Oat’s new Real Medleys instant oatmeal bowls and were super excited to try them out. With the coupon it only ended up costing us $0.70! Josh absolutely loved them. They were a little sweeter than I’m used to with my oatmeal but still delicious. We both agreed this is the perfect healthy traveling breakfast. You just add hot water and let it sit for three minutes. Josh plans on using them on his trip to visit his parents in Connecticut this weekend!

Josh and I went to Sams Club this weekend to stock up on random household items and scope out the samples. Those totally make my shopping experience! ;p While we were there Josh spotted a new-to-us Sabra flavor called Tuscan Garden Hummus. It is so good, and dare I say it my favorite hummus flavor to date? I know that’s a big statement coming from someone that eats Roasted Red Pepper hummus every single day. ;p

While we were being adventurous and trying new things we decided to try the Field Roast Smoked Apple Sage sausage. I’ve heard really good things about them and was excited to see how they cooked up.

I sauteed them with spinach, red pepper, onions, and cheese. It was so incredibly delicious and such a healthy meal, I am definitely a fan of the veggie sausage!

For breakfast one morning I decided to try mixing a banana with Honey Nut Cheerios. I don’t know why this never occurred to me before but it tasted so incredibly good! I always plan on mixing in a little extra fruit to my cereal from now on.

We also had a lot of coffee this weekend. We just picked up a coffee shelf for Josh’s Keurig this weekend and have had a fun time sampling some new flavors. My favorite is still the Donut Shop Coconut Mocha. We also found its a good snack because if you just add milk and nix the sugar (This was hard for me to do at first but after a few weeks I don’t even miss it or notice the difference in taste. I’m starting to like coffee that tastes like coffee!) you’re getting a low calorie snack with a little extra added caffeine buzz.

And that was our weekend! It was a super fun one that, like always, went by way too fast! Time to head to bed so I can get a good nights sleep. I’ve got a lot of paperwork to fill out for my internship tomorrow!
