Hey guys! I hope your week is going well. I’ve got a little middle of the day post that is abnormal for me. Spring Break is a wonderful thing.
I ran to Trader Joe’s today for lunch and to grab food to make dinner for Josh and myself. I picked up some yummy things so I thought it would be fun to do another what’s in my bag post.

Irish Soda Bread! I didn’t go into the store expecting to buy this but they were giving out samples and it was too tasty to pass up. It’s almost St. Patrick’s Day and I am so excited to celebrate. I’m very Irish and Josh has got some Irish in him so I thought this would be a nice little treat for us.

At my bridal shower one of the questions on the how well do you know the bride quiz was what my favorite food is. The answer? Brussels sprouts! I’m so obsessed with them. I love how easy and quick they are to cook! Josh doesn’t have a steamer here so we’re going to roast these bad boys.
I was craving something healthy and filling for lunch and when I saw this roasted butternut squash with quinoa and wheatberry salad I knew it was just what I was looking for.

It was chock full of arugula, cranberries, almonds, and had a sprinkle of goat cheese. It was so tasty I didn’t even use the dressing.

I’m so excited to try this grilled eggplant and zucchini melange. Josh and I are going to put it on toasted bread and top it with some homemade guacamole for delicious veggie sandwiches.

Speaking of homemade guacamole I’m so excited to try this guac kit.

It’s packed with everything you need to make some delicious guacamole right in your own house. I’ve been craving some ever since having it fresh tableside at Plaza Azteca.

OOOO DO TELL how you like the Eggplant and Zucchini! I have only tried the plain grilled eggplant and zucchini which ROCKS MY SOCKS OFF!! TJ’s makes life so easy!

Oh my goodness, we are the SAME! I went to TJs on Wed- bought a bunch of yummy stuff in a hurry and thought I should write a post about all the fun stuff I bought…including that wheat berry salad! I just finished it today- it was such a weird combo but good!
The wheat berry salad is amazing!! I’m kind of obsessed!
Shopping bag this week included oranges, almond butter, celery, go raw cookies and all of my greens! I am Irish to an actual citizen as well so I love the spirit of the green

Are Trader Joe’s is about an hour away, Which sucks. I really think that guacamole kit is super cute. Have you tried shredded brussels sprouts it’s great for salads!
