Squash Casserole Recipe (with a Le Creuset and PAM giveaway)

This past weekend Josh and I attended our first Friendsgiving! Joanna and her husband invited us to celebrate the season with friends, and Josh and I knew we wanted to bring a special dish to mark the special occasion. We wanted it to be healthy, tasty, relatively simple to make, and not make too much of a mess. Josh and I both have the habit of using every dish in the kitchen when we cook.

Add a small sink into the mix and we are a hot cooking mess. We’re working on it.

When I was given the opportunity to create a recipe that involved PAM cooking spray, I was pretty excited. 1. We were out of PAM and they refilled our stash. 2. Their 99% product line leaves 99% less residue behind than other cooking sprays. I will take any help I can get to keep my kitchen from turning into a disaster zone when we cook so I can spend less time cleaning up messes and more time enjoying the party! (Or watching Bravo. Either one.)

Josh came up with the idea to create a veggie casserole for the Friendsgiving party. We blasted Christmas music for the first time this year and got to cooking. It was so much fun. This is our first married Christmas and Hanukkah so we’re going to do it big! For a chance to win some goodies that will help you with your holiday parties this season read on.

Squash Casserole
Serves 6-8

  • 2 large yellow squash
  • 1 small sweet onion
  • 1 large carrot
  • 5 cloves of garlic, finely diced
  • 1 cup plain Greek yogurt
  • 2 tablespoons melted butter
  • 1 egg
  • 1 cup semi-hard cheese (we used mild goat gouda)
  • 1/3 cup skim milk
  • 30 butter crackers, crushed
  • 2 teaspoons dried sage
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper
  • Paprika, salt and pepper to taste

Preheat oven to 350 degrees

Chop up all your veggie goodies

Grease your pan

Cook squash, onion, and carrots separately for about 5 minutes each, adding the garlic to the carrots and cooking them for an additional three minutes.

Mix all the veggies up, adding your Greek yogurt, milk, egg, butter and spices as you mix. Add half the crushed crackers and 3/4 of the cheese and mix thoroughly.

Grease a round casserole dish. (This lovely Le Creuset pan was sent to us by Pam and is identical to the one a lucky reader will be winning!)

Pour in the casserole mixture and top with remaining cheese and crackers. I also sprinkled it with a little paprika for color. Bake for 30-35 minutes, or until the top of the casserole is firm and golden brown.

The result is ooey, gooey, casserole goodness that is sure to please at your holiday party.

Winner Selection:

    That looks so good! Sadly I can’t make it home with my family this year so I am hosting my own Thanksgiving dinner for friends that are in the same boat. I am excited to try making an entire feast! Especially a healthier version of pumpkin pie. This pie dish would be perfect to use since I do not have one!

    I make a breakfast casserole for Christmas morning a recipe that has been in the family for a few generations. It has sausage, gravey, eggs, bread, green onion and a lot of cheese! Perhaps I’ll bake and think about sharing one of these days.

    I am looking forward to making a butternut squash and apple casserole that I make in layers. This pan would be perfect!

    I had to give up all my Le Creuset pans when we moved onto the boat as they are so heavy. Would love to start building a new collection now that we are landbased again.

    I always look forward to green bean casserole! I’m not a HUGE thanksgiving fan, so I always request my favorite sidedish! Christmas Eve is much more my speed – ham and scalloped potatoes!

    I LOVE baking and cooking this time of year. Keeping it simple for Thanksgiving with homemade cranberry sauce (been craving it for awhile) and gotta love the Christmas cookie baking that will begin right after Thanksgiving!

    Ohhh, sold on anything with squash right now!

    My friends and I always get together to make Christmas cookies. It started with a few of us, but now it is in mass. Last year we tried this healthy(er) cookie recipe from some nutrition magazine, which just didn’t cut it. Although, my friends nephew did say the cookies were hard as rocks but also good. But still thinking we’ll go a different approach this year, so currently on the hunt for a good different recipe.

    Every year I look forward to making apple pies with my mom. We make the dough from scratch and hand-slice every apple. We make two for our family and a bunch more for family friends. It is a great treat for us to spend the day before Thanksgiving catching up! This year I will also make a no-bake chocolate eclair casserole that looks super easy and tasty. Can’t wait for the holiday!

    Making gluten and dairy free green bean casserole. It is actually really amazing! I just sub almond milk and earth balance (for my allergy kids) and the end result is so from scratch delicious. Even if I could go back to “normal” cooking I would not make green bean casserole with a can of soup again!

    Homemade cranberry sauce. I usually end up freezing the leftovers and using it in Greek yogurt, on top of oatmeal, in sandwiches, etc.
